Pesto chicken sandwich
If you love a hit of flavour, you need to try making your very own pesto chicken sandwich. It’s quick, it’s tasty and it will put a spring in your step.
Serves 2
DF, Refined sugar-free
Ingredients
4 slices of sourdough bread
1/2 iceberg lettuce, shredded
1/2 cucumber, spiralled
1/2 cup alfalfa sprouts
1 chicken breast, cooked and shredded
Pesto
2 bunches basil leaves
1/4 cup pine nuts
1 tablespoon hemp seeds
2 garlic cloves, minced
1/3 cup extra-virgin olive oil
Method
1. Prepare pesto by placing all ingredients in a measuring cup. Using a handheld stick blender, blitz ingredients until combined and smooth. Set aside.
2. Lay out slices of the sourdough bread and begin layering your sandwich, starting with pesto, iceberg lettuce, cucumber, shredded chicken and alfalfa sprouts.
3. Halve the sandwiches and enjoy fresh!
